With my youngest back at school 5 days a week now & the busiest time of the year for most of us food bloggers just around the corner, I am ready to get re-focused on some of my own personal goals that I want to accomplish before the end of the year. Spicy Tuna Roll Quinoa Salad

For the dressing
  • 1 tbsp  reduced fat mayonnaise 
  • 1 tsp sriracha sauce
  • 1/2 tsp sesame oil
  • 1 tsp fresh lemon juice
For the quinoa salad

instructions:

How to cook Spicy Tuna Roll Quinoa Salad

  1. In a small bowl, whisk together the mayonnaise, sriracha sauce, sesame oil, & lemon juice until well blended. Set aside.
  2. In another bowl, combine the quinoa, tuna, cucumber, & avocado. Toss with the spicy dressing. Top with black sesame seeds before serving, if desired. 
  3. Enjoy immediately, or store in an airtight container in the refrigerator for up to 3 days.
