With my youngest back at school 5 days a week now & the busiest time of the year for most of us food bloggers just around the corner, I am ready to get re-focused on some of my own personal goals that I want to accomplish before the end of the year. This quinoa salad is inspired by one of my favorite sushi rolls- spicy tuna. I whipped up a quick & easy spicy dressing for this salad, and then tossed it with whole grain quinoa, crunchy cucumber, creamy avocado, & StarKist Selects E.V.O.O.® Yellowfin Tuna.

Spicy Tuna Roll Quinoa Salad

ingredients:
For the dressing
- 1 tbsp reduced fat mayonnaise
- 1 tsp sriracha sauce
- 1/2 tsp sesame oil
- 1 tsp fresh lemon juice
For the quinoa salad
- 2/3 cup quinoa, cooked & chilled
- 1 (2.6 oz) pouch of StarKist Selects E.V.O.O.® Yellowfin Tuna
- 1/2 cup of julienned cucumber
- 1/2 of an avocado, chopped
- Black sesame seeds (for garnishing, optional)
instructions:
How to cook Spicy Tuna Roll Quinoa Salad
- In a small bowl, whisk together the mayonnaise, sriracha sauce, sesame oil, & lemon juice until well blended. Set aside.
- In another bowl, combine the quinoa, tuna, cucumber, & avocado. Toss with the spicy dressing. Top with black sesame seeds before serving, if desired.
- Enjoy immediately, or store in an airtight container in the refrigerator for up to 3 days.
