My daughter is enjoying her last few days of summer break, and I am thinking ahead to next week when school starts back up for the year. Even though we do not know quite yet what her second grade year will bring, one thing is for certain- she will come through the door just about every afternoon after school proclaiming how hungry she is. So I am making a mental list now of fun & easy snacks that she can help me make when her after school munchies hit.
Inspired by her recent reading of The Tales of Tofu from House Foods ebook, my daughter asked if we could try one of the recipes from the ebook. My daughter loves any & all smoothies, so she of course requested that we whip up the Strawberry Papaya Tofu Smoothie in preparation for all that upcoming back to school snacking.
I will be the first to admit that tofu is not an ingredient that I have used very often in my recipes. But it's mildness & creamy texture really lends itself well to easily mixing it with more familiar foods & ingredients. Plus, tofu is a great way to help my family eat healthier.
Although I am certain that we will be trying the recipes for the Broccoli Mac and "Cheese" & the Tofu Chocolate Pudding very soon, we decided to give the Strawberry Papaya Tofu Smoothie a go first. It is a thick & creamy blend of House Foods Tofu Soft, sweet strawberries, fresh papaya, frozen mango, & banana.
Just because after school time can get a little hectic around here doesn't mean that we have to forfeit nutrition when it comes to quick snack ideas. From start to finish, it took us around 5 minutes to whip up this kid-approved, fruit packed smoothie. And it maybe took my daughter just 5 more minutes to slurp it all down. ;)

- 1/2 package of House Foods Tofu soft
- 3/4 cup papaya; peeled, seeded, and chopped
- 1 cup fresh strawberries
- 1 cup frozen mango, chopped
- 1/2 banana

How to make Strawberry Papaya Smoothie
- In a blender, combine all the ingredients. Cover and blend until smooth, about 30 seconds or so.
- Enjoy!
