My youngest just may have started the first grade last week. And my oldest may have moved into his dorm room this past weekend to start his sophomore year of college, but I am not throwing in the towel on summer just quite yet, folks. I mean, technically it is still summer until September 22nd- am I right? ;)





I am sure you all have already seen the pumpkin recipes starting to creep in all over Facebook lately. And while I am probably the biggest fan of fall that you will ever meet, I am not quite ready for all the pumpkin things just yet. I most definitely will be, but not in mid AUGUST, you all. 





So, let's enjoy summertime just a little bit longer with these easy to make Blackberries & Cream Biscuits, shall we?

These super simple biscuits require only 6 ingredients to make (4 if you decide to use the self-rising flour instead in these) including sweet & juicy summer blackberries! And you can have these prepped & baked in around 30 minutes. :)

I served these biscuits shortcake style by sandwiching a big ole dollop of homemade whipped cream in between two of the biscuits & garnishing it all with fresh blackberries & mint springs. I do highly recommend whipping up your own homemade whipped cream for these, and it happens to be super easy to make too.





Just place a small metal mixing bowl & the beaters from your mixer into the freezer for at least 15 minutes. When the bowl & beaters are nice & cold, add 1 cup of heavy cream and 1-2 teaspoons of sugar to the bowl. Beat on medium until it the mixture starts to thicken. Gradually increase the speed on your mixer until peaks start to form. 





At this point, you can add in a few drops of vanilla extract if you would like. Cover & refrigerate your whipped cream until you are ready to use it, but do use it within a day. Homemade whipped cream contains no stabilizers so it will start to breakdown within 24 hours.

These biscuits are amazing with fresh blackberries in them, but they would also be fabulous made with strawberries, raspberries, or blueberries. And if you are feeling really crazy, you could bake up a batch of these biscuits using a mixture of your favorite berries. ;)
