I know when most people think of their "happy place" they usually think of a beach with a cocktail in hand. Or a secluded cabin in the mountains. And while I could definitely go for either one of those places right about now, my favorite happy place happens to be my kitchen.
It is the one room in my house where I can create. And cook. And bake. And tinker with new recipe creations while also whipping up the tried & true recipes that my family loves and asks for time & time again. The rest of my house can be an absolute chaotic mess, but as long as my kitchen is clean, & tidy, and stocked with all the pretty things then I am able to find my inner calm and breathe.
One way that I am keeping my happy place decked out in trendy, yet functional utensils, gadgets, & cutting boards is with the Thyme & Table kitchen line from my local Walmart. Not only is my kitchen my happy place, but it also happens to be where I practice my love language. And my love language happens to be cooking & baking for the people that I love and care about.
Whether it is for a celebration or to cheer someone up or just because, a pot of homemade chicken noodle soup or a loaf of freshly baked banana bread (like this Chocolate Chunk Peanut Butter Banana Bread recipe that I am sharing with you all today) are a few of my favorite ways to show that I care, that I am thinking about a friend or a loved one.
And I am finding myself inspired to cook & bake even more because of my new Thyme & Table silicone spatulas & wooden kitchen utensils. This banana bread recipe was inspired by my family's love for all things chocolate & peanut butter. It is by far every one's favorite flavor combo in my home, so I know I just can't go wrong with it when I am creating new recipes for the blog.
A few tips for this banana bread recipe:
- I use smooth peanut butter in this, but feel free to use chunky if you would like a little more crunch to your bread.
- Here is a food blogger/photographer trick for you all- After pouring the batter into the loaf pan, sprinkle some chocolate chunks & whole peanuts all over top. This will give you that picture perfect loaf of banana bread.
- If you can't find chocolate chunks in the bag at your local grocery store, then buy a bar of good quality baker's chocolate instead and chop it up.
- If you don't have Greek yogurt on hand, feel free to swap in sour cream instead.
- For less crunch, leave out the whole peanuts or finely chop them instead.
Chocolate Chunk Peanut Butter Banana Bread

Prep Time: 15 minutes
Cook Time: 1 hour
Ingredients (Serves 8-10)
- 1 1/2 cups flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 ripe bananas, peeled & mashed
- 1/3 cup milk
- 1/3 cup plain Greek yogurt
- 1/2 cup creamy peanut butter
- 1 tsp vanilla extract
- 2 eggs, lightly beaten
- 1/3 cup granulated sugar
- 1/3 cup light brown sugar
- 1 cup chocolate chunks or chopped chocolate
- 1/2 cup dry roasted peanuts
Instructions
Preheat your oven to 350 degrees. Generously spray the inside of a loaf pan with cooking spray. Set aside.
In a medium mixing bowl, whisk together the flour, baking powder, baking soda, & salt. Set aside.
In a large mixing bowl, whisk together the mashed bananas, milk, yogurt, & peanut butter until well combined. Then mix in the vanilla, eggs, & sugars.
Slowly add the flour mixture to the wet ingredients, stirring until just combined. Fold in the chocolate chunks & peanuts.
Pour the batter into the prepared loaf pan. Bake at 350 degrees for 55 minutes. The banana bread is done when a toothpick inserted into the center of the loaf comes out clean.
Let the bread cool in the pan on a wire rack for 15 minutes. Gently slide a butter knife along the edges of the pan, & remove the bread from the pan by gently turning it upside down over the wire rack. Allow the loaf to cool completely.
Slice & enjoy!
Leftover banana bread will stay good for 3-5 days as long as you keep it wrapped tightly.
