When it comes to the flavors of fall, pumpkin is by far my favorite. Now, don't get me wrong. I also happen to love all the apple things & chai spiced goodies (especially when those chai spices happen to be paired with pumpkin ;) ), but pumpkin has always held a special place in my heart.
While I do love a good pumpkin donut or ice cream, classic pumpkin pie has always been my favorite pumpkin treat. Nothing fancy- just a creamy pumpkin filling nestle inside a homemade pie crust topped with a dollop of whipped cream.
I could probably eat a slice of pumpkin pie everyday during fall, but I don't think that my waistline would be very pleased with that choice.
Luckily, I have come up with a way I can enjoy all the deliciousness of a slice pumpkin pie for breakfast, but still keep it on the healthier side with these Pumpkin Pie Greek Yogurt Pancakes...
Ever since I whipped up these Banana Split Greek Yogurt Pancakes in August, I have been sort of obsessed with adding Greek yogurt to my homemade pancake batter.
The yogurt gives the pancakes a slight tang, makes them super moist, & gives them that golden brown crispiness around the edges. Greek yogurt has literally become my new secret weapon for the perfect stack of homemade pancakes.
While these pumpkin pancakes are delicious just as they are, they also happen to lend well to some of your favorite mix-ins. Try adding in a one or two of these mix-ins when whipping up the batter for these pancakes...

- 1/2 cup of semi-sweet chocolate chips
- 1/2 cup of chopped pecans or walnuts
- Swap out the spices in this recipe for 1 1/2 teaspoons of my DIY Chai Spice Mix

ingredients:
- 1 egg
- 2/3 cup vanilla or plain Greek yogurt
- 1/2 cup pumpkin puree
- 1/4 cup milk
- 1 tbsp brown sugar
- 1/2 tsp vanilla extract
- 3/4 cup flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
instructions:
How to cook Pumpkin Pie Greek Yogurt Pancakes
- Preheat your griddle to 350-400 degrees. Alternatively, heat a skillet over medium heat.
- In a medium mixing bowl, whisk together the egg, Greek yogurt, pumpkin puree, milk, brown sugar, & vanilla extract. Add in the flour, baking powder, & the spices, & then mix into the wet ingredients.
- Once the griddle or skillet is heated, spray with nonstick cooking spray. Use 1/3 cup of batter for each pancake. Flip once the batter on top starts to bubble, about 2-3 minutes. Cook on the other side for another 2-3 minutes & then remove from the griddle or skillet.
- Stack 2-3 pancakes per serving. Top with maple syrup, whipped cream, & a sprinkle of cinnamon, if desired. Serve immediately. Enjoy!
