It always seems like Memorial Day weekend is the weekend that officially kicks off summertime. It is the start of BBQ seasonThe first long holiday weekend of summer. The beginning of summer break from school for many of the kiddos. The first weekend that the local pool is open for the summer season. It also marks the start of summertime entertaining season for me.





The husband & I love to have family and friends over for a cookout or to celebrate summer holidays. We fire up the grill, break out the cornhole set, and prep the fire pit for s'mores making once the sun goes down. 





My husband often grills burgers & hot dogs or smokes baby back ribs to perfection in his smoker. And I am always in charge of the side dishes for our little summertime get-togethers. ;)





We almost always serve a traditional mayo based potato salad at our BBQ's, but I decided to change it up for the cookout we hosted for my son's high school graduation over the weekend. I lightened up our usual potato salad with a little Greek yogurt, but amped up the flavor by oven roasting the potatoes instead of boiling them & mixing in a packet of onion soup mix...

There happens to be a very important reason why I am sharing this creamy, flavorful potato salad recipe with you all today- Not only does Memorial Day weekend mark the start of summer for most of us, but it also happens to usher in the beginning of one of my favorite months of the year- June, which is National Dairy Month! :) 





You all may remember when I hopped in the car September before last and took a little road trip to Cleveland to hang out with some of my food blogger friends & the good folks from the America Dairy Association Mideast





We spent an entire day exploring the dairy farms outside the city where we met the Indoes and Andreas families. Both families have been dairy farming in Lodi and Sugar Creek, Ohio (respectively) for generations. Click here to meet the Indoes, and click here to meet the Andreas family.

French Onion Roasted Potato Salad

Your backyard BBQ guests will love this lightened up & flavor packed French Onion Roasted Potato Salad.

Prep time: 15 min Cook time: 1 hour Total time: 1 hour & 15 min

Ingredients:

  • 1.5 lbs of Yukon gold potatoes, scrubbed & chopped into bite sized pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup nonfat plain Greek yogurt
  • 1 packet of dry onion soup mix
  • 2 stalks of celery, chopped
  • Salt & pepper, to taste
  • Chopped green onions, to garnish

Instructions:

  1. Preheat your oven to 400 degrees. Add the chopped potatoes, olive oil, and salt & pepper to a large mixing bowl. Toss to coat evenly. Spread the prepared potatoes in a single layer onto a large baking sheet. Roast the potatoes for 45 minutes to 1 hour, turning halfway through the baking time. Potatoes are done when they are golden brown and fork tender. Let the potatoes cool completely.
  2. Once the potatoes have cooled, mix together the Greek yogurt & onion soup mix in a large mixing bowl. Add in the cooled potatoes & chopped celery; mix well. Season with salt & pepper to taste. Top with chopped green onions. Cover & refrigerate until ready to serve.
  3. Enjoy!
