We are in full-on back to school mode over here. My son starts his senior year of high school in less than a week, and my youngest will start her first day of Pre-K the week after. To say I have my hands full over here getting them both ready for the new school year would be an understatement. ;) 

The biggest challenge for me right now is making sure that they both get a healthy start to the year. It is trying to find that balance between making sure they have healthier, more real food snacks on hand to enjoy after school while still making sure that those same snacks are also fun for the kiddos. I think I successfully accomplished both of those goals with these magical Unicorn Yogurt Pops.

These frosty pops are a creamy blend of bananas, protein-packed Greek yogurt, and our favorite almondmilk. But what makes them magical for the kids are the swirls of bright colors and the fun star-shaped sprinkles... ;)

Unicorn Yogurt Pops

Prep Time: 4 hours, 10 minutes
Cook Time: None
Ingredients (Serves 6)
  • 2 ripe bananas, peeled & mashed
  • 1 cup Simple Truth Organic Vanilla Greek Nonfat Yogurt
  • 1/3 cup Silk Unsweetened Almondmilk
  • 1 tsp vanilla extract
  • Food coloring (I used pink, purple, blue, & yellow)
  • 1-2 tbsp of sprinkles (I used Kroger Stars Dessert Topping.)
Instructions
Place the mashed bananas, yogurt, almondmilk, & vanilla extract in a blender and blend until smooth. Divide the yogurt/banana mixture evenly into 4 different bowls. Whisk 2-3 drops of 4 different food coloring into each bowl creating 4 different vibrant colored mixtures. I used pink, purple, blue, & yellow. I would suggest staying away from green as it can turn the whole batch a dark green color. Divide the 1-2 tbsp of sprinkles among the 4 bowls.

Gently pour each bowl of the colored yogurt pop mixture into a 2 cup measuring cup with a spout. Do not mix. Pour the mixture evenly into each of your 6 popsicle molds. Freeze for at least 4 hours & up to overnight.

To easily remove the yogurt pops from the molds, run each one in the mold under hot water for 5-10 seconds & then gently slide out.

Keep any remaining yogurt pops in the freezer for up to one month.

Tip: The key to getting the pretty swirls of rainbow colors in these yogurt pops is to not mix the colored yogurt mixtures together once you add them to the measuring cup. I just poured one color after another into the cup, and then immediately poured the mixture into the popsicle molds. The colors naturally created their own swirls as a poured the yogurt mixture into each mold. 

Take my word for it- If you try to swirl or mix the colors before pouring it into the molds, your pops will probably end up being more of a dark green color. I may or may not personally know this from the first batch of these Unicorn Yogurt Pops that I made. ;)

We all know that back to school season comes with enough time consuming challenges already. That is why I am glad for the Natural Foods section at my local Kroger.
