With peach season in full swing now, I am always trying to concoct new delicious ways of enjoying one of my favorite summertime fruits. As I was looking through my fridge the other day, I spied a bottle of peach moonshine (not the backwoods stuff, folks) we had picked up a few months ago & the wheels started turning. I have always wanted to try my hand at a boozy popsicle, so I thought why not a peach one?

These Peach Shinesicles literally have just 3 simple ingredients in them- fresh pureed peaches, peach juice, and peach flavored moonshine. Many liquor stores now carry moonshines or cordials cut with moonshine, but if you cannot find a peach flavored shine feel free to use a peach liqueur like Schnapps instead. Or if you happen have a bottle of the homemade stuff laying around, you could totally use that too. ;)

Peach Shinesicles

Prep Time: 10 minutes

Cook Time: None

Ingredients (12 popsicles)

3 large fresh peaches, pitted, peeled, & chopped
1 1/2 cups peach juice or nectar
1/4 cup peach flavored moonshine (can use Peach Schnapps if you can't find shine)

Instructions

Place the chopped peaches, peach juice or nectar, and peach moonshine in the blender and blend until smooth. Pour into 12 popsicle molds. Freeze at least 4 hours or up to overnight, until set & frozen.

To easily remove the shinesicles from the molds, run each shinesicle in the mold under hot water for 5-10 seconds & then gently slide out.

Keep any remaining shinesicles in the freezer for up to one month.

Enjoy & keep cool!

Though these Peach Shinesicles don't pack a huge boozy punch (there is just 1/4 cup of moonshine in the whole lot of 12 popsicles), these frozen treats are meant for the adults only. I mean, why should the kiddos get to be the only ones having all the popsicle fun during the summer? ;) You can enjoy these peachy pops as is, but I love to serve them dropped right into a nice glass of Moscato or Rose, or with a nice crisp & bubbly Prosecco.
