There is no flavor combination out there that screams summer is on its way to me quite like lime with coconut. The sweet & tart combo of lime and coconut makes me think of cabanas on a tropical beach, and sipping on frozen libations on the backyard deck, and of course that super catchy song by Harry Nilsson. And I know pineapple and coconut get most of the summer lovin' (Hello, pina coladas! Duh.), but I think the coconut/lime combination deserves a little time in the limelight too (Like what I just did there? ;) ). 

I know that the official start of summer is still over a month away, but who says that we have to wait until then to get into that summertime vibe? Not me! I am diving right in with this moist and flavorful banana bread recipe. The banana bread itself is packed with lots of sweet coconut flavor and just a hint of fresh lime. But what really makes this bread something else is the super simple tart lime glaze you drizzle right over top. Finish it all off with a little toasted coconut, and you have just created the perfect taste of summer in the middle of May...

Lime in the Coconut Banana Bread

Prep Time: 10 minutes
Cook Time: 1 hour, 10 minutes
Ingredients (1 loaf)
  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/3 cup coconut oil (in liquid form)
  • 2 eggs
  • 1 tsp coconut extract (can use vanilla instead)
  • Juice & zest from a fresh lime (save the half of the juice & 1 tbsp of the zest for the glaze)
  • 3 ripe bananas, mashed
  • 1/2 cup coconut or vanilla yogurt
  • 1/2 cup + 2 tbsp shredded coconut
For the lime glaze
  • The reserved lime juice & 1 tbsp of lime zest
  • 1/2 cup powdered sugar
Instructions
Preheat your oven to 350 degrees. Spray a bread pan with cooking spray (I used coconut oil spray to add even more coconut flavor).

In a small bowl, whisk together the flour, sugar, baking soda, and salt. Set aside.
In a large bowl, whisk together the oil, eggs, and coconut extract. Then mix in the bananas, lime juice & zest, and yogurt.
Mix the flour mixture into the wet ingredients. Mix well. Fold in the 1/2 cup of shredded coconut.

Pour the bread batter into the prepared pan. The bread will take about 1 hour, 10 minutes to bake. The banana bread is baked through when a toothpick inserted in the middle comes out clean.
Allow the bread to cool in the pan for about 10 minutes and then turn out onto a wire rack.

While the banana bread is cooling, toast the remaining 2 tbsp of coconut. Turn the heat on the oven down to 325 degrees. Spread the shredded coconut on a parchment paper lined baking sheet in a single layer. Toast in the oven to 3-4 minutes. Keep a close eye on it- shredded coconut can go from perfectly toasted to burnt in seconds. Allow to cool.

For the lime glaze
In a small mixing bowl, whisk together the remaining lime juice, 1 tbsp of zest, and powdered sugar until smooth.
Pour the glaze over top of the cooled banana bread and immediately sprinkle with the toasted coconut.

Slice, serve, & enjoy!
