With Memorial Day weekend and long summer days quickly approaching, we all need easy, crowd-pleasing dessert recipes to have on hand for holiday get-togethers and backyard cookouts.
One of my favorite desserts to make, especially during the summer months, is a good old-fashioned poke cake. Poke cakes are so easy to make, yet they are impressive and pretty. They also lend themselves well to all the sweet fruits of summer.
While I created this Berry Patriotic Poke Cake with Memorial Day weekend in mind, this is also the perfect dessert for a Fourth of July celebration. You just can't beat a light and fluffy white cake spiked with black cherry gelatin, then topped with creamy whipped topping and fresh raspberries and blueberries.
You can have your red, white and blue, and eat it too!
Keep in mind that this poke cake is also super versatile as well as pretty. You can easily swap out the raspberries for strawberries or fresh cherries, or trade in the blueberries for blackberries. Not a fan of cherry gelatin? Try raspberry or strawberry instead. :)

Berry Patriotic Poke Cake
Incorporating the flavors of black cherry, fresh raspberries and blueberries, this easy-to-make Berry Patriotic Poke Cake is the perfect addition to your summer celebration.
Prep time: 2 hours & 20 min Cook time: 30 min Total time: 2 hour & 50 min
Ingredients:
- 1 box (16.5 oz.) Kroger White Cake Mix
- 1 cup water
- 1/4 cup vegetable oil
- 3 large egg whites
- 1 box (3 oz.) Kroger Black Cherry Gelatin Dessert
- 1 cup boiling water
- 1/2 cup cold water
- 1 tub (8 oz.) Kroger Extra Creamy Whipped Topping, thawed
- 1 package (6 oz.) fresh raspberries
- About ¼ cup fresh blueberries
Instructions:
- Preheat your oven to 350 degrees. Spray a 13"x9" pan with cooking spray. Set aside.
- Follow the cake mix box directions to prepare the cake batter using the cake mix, 1 cup water, oil and the egg whites. Spread evenly into the prepared pan. Bake for 23 to 28 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for 15 minutes in the pan. Then poke holes in the cake at ½-inch intervals.
- In a small bowl, add 1 cup of boiling water to the black cherry gelatin mix. Stir well, then add in ½ cup of cold water and stir again. Pour over the cake, making sure to get the gelatin into each of the holes. Refrigerate for at least 2 hours.
- Once the cake has chilled for at least 2 hours, spread the entire tub of whipped topping evenly over top of it. Use the blueberries and raspberries to create an American flag design on top of the whipped topping if desired.
- Serve immediately or refrigerate until ready to serve. Enjoy!
