One of my goals in 2016 is to get my family around the dinner table more often. Last year that rarely happened unless it happened to be a special event- like a holiday dinner. So, yeah. It was a pretty rare occasion.
Often times, my husband and daughter eat dinner in the living room. Sometimes I join them, but more often than not I find myself having a working dinner at my laptop. My teenage son makes a beeline for his bedroom where he hides away with his dinner plate watching Netflix. So this year I have decided that I am taking back our family dinners around the kitchen table!
And just how I am going to do that? For one, the kitchen table is no longer permitted to be everyone's dumping ground when they walk through the door after coming home from school and work. If the table is clear, then we are more likely to use it.
Another way I am working to achieve this goal is by finding more and more home cooked meals that I can make easily and more quickly. If I can get dinner on the table a little faster, then that means more time around the table as a family. That is why I am so glad that I was asked to check out & review my friend Trish's (from Mom On Timeout) new cookbook, 100 Creative Ways to Use Rotisserie Chicken. :) Her cookbook is packed with no fuss, delicious chicken dinner recipes- from casseroles to 20-minute dinners to slurpable soups. Since we are full swing into soup season, I chose to whip up a pot of her Parmesan Chicken Corn Chowder (on page 217). This creamy chowder with its hearty potatoes, roasted chicken, and the addition of Parmesan cheese takes the traditional corn chowder to a whole other level of deliciousness...
Parmesan Chicken Corn Chowder
by
Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients (Serves 6)
- 2 tbsp olive oil
- 1 carrot, sliced
- 1 stalk celery, sliced
- 1/2 onion, diced
- 2 cups chicken broth
- 1 lb. red potatoes, washed and quartered or cubed, depending on size
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 2 cups whole milk
- 14 3/4 oz. can of cream-style sweet corn
- 12 oz. pkg. frozen corn
- 2 cups shredded rotisserie chicken
- 6 oz. grated Parmesan cheese
Instructions
Heat the olive oil in a large saucepan and saute the carrot, celery and onion for five to six minutes, or until the onion is translucent. Add the chicken broth and potatoes, cover and simmer for 12 to 15 minutes, or until the potatoes are tender.
Meanwhile, melt the butter in a small saucepan. Whisk in the flour, salt and pepper until nice and smooth. Gradually stir in the milk, whisking continuously until smooth. Bring the mixture to a boil over medium heat and continue cooking, whisking continuously, until the mixture has thickened. Remove from the heat.
Once the potatoes are tender, stir the flour and milk mixture into the simmering veggies. Stir in the corn, chicken and Parmesan cheese and cook for another 10 minutes, or until the cheese has melted and the chicken and corn are heated through.
Ladle into bowls & top with additional Parmesan cheese, if desired.
Enjoy!

I love making home cooked meals for my family, but some evenings I need a shortcut or two. With the help of 100 Creative Ways to Use Rotisserie Chicken, I can pick up a rotisserie chicken at the grocery store and easily whip up any one of Trish's weeknight friendly chicken dinner recipes. :) Quicker dinner prep means more time at the dinner table with my husband and kiddos. But I think Trish said it best in the introduction to her cookbook...
"For me, life happens in the kitchen, and more importantly, around the dinner table. As much as I love cooking and baking meals for my family, I love spending time with them even more."
This Parmesan Chicken Corn Chowder was a HUGE hit with my entire family! Every bowl was left empty. :)
