Maybe you had a lot of guests over for that big dinner. Maybe you need a little quiet time to yourself after the hustle & bustle of those Black Friday sales. Maybe you need to get up just a bit earlier than everyone else this holiday weekend to carve out a little time for yourself because that is the only me time that you are going to get until Monday. 






But regardless of why you are looking to get a little alone time one morning this weekend, this french toast in a mug should definitely join you. Pumpkin Pecan French Toast for One

Transform a couple of pieces of leftover bread or rolls into this quick and easy Pumpkin Pecan French Toast for One.

prep time: 5 min cook time: 2.5 min total time: 7 min

ingredients:

  • 1 tbsp unsalted butter
  • 1/4 cup milk
  • 1/4 cup pumpkin puree
  • 1 egg, beaten
  • 1/4 tsp pumpkin pie spice
  • 1 tbsp brown sugar
  • 1/4 tsp vanilla extract
  • 2 tbsp chopped pecans
  • 1 1/2-2 cups of leftover rolls or bread, cut into cubes

instructions:

How to cook Pumpkin Pecan French Toast for One

  1. In a large microwave-safe mug (at least 16 oz), melt the butter in the microwave, approx 30-45 seconds.Tilt the mug around in a circle to coat all sides of the mug with the butter.
  2. Add the milk, egg, pumpkin puree, pumpkin pie spice, brown sugar, & vanilla extract to the butter in the mug, and mix well. Add in the chopped pecans. Then press the bread cubes down into the mixture and stir to coat all pieces.
  3. Microwave on high until set and cooked through, about 2 minutes. Top with additional pecans and maple syrup, if desired.
  4. Enjoy!
