This Strawberry-Walnut Chicken Salad is a fresh, bright take on a classic chicken salad that is perfect for your spring or summer lunch table. Strawberry-Walnut Chicken Salad

Cook Time: 3-5 minutes
Ingredients (4-5 servings)
- 1/2 cup of toasted chopped walnuts (toast on a baking sheet at 350 degrees for 3-5 minutes, until fragrant)
- 1 1/2 cups cooked white meat chicken, chopped
- 1/2 cup fresh strawberries, hulled and chopped
- 1/4 cup red onion, chopped
- 1 stalk of celery, chopped
- 1/3 cup of nonfat plain Greek yogurt
- 1/4 tsp garlic powder
- 1/4 tsp Kosher salt
- 1 tbsp balsamic vinegar
Instructions
Combine all the ingredients in a large mixing bowl. Mix well. Chill in the fridge for at least 2 hours.
Serve on your favorite bun, croissant, or bread with fresh arugula or mixed greens. Or serve over a bed of fresh mixed greens.
Enjoy!
Cover and refrigerate any leftovers for up to 3 days.
