Just a little over a month or so ago, I was wondering if winter was ever going to formally make it's exit. Winters here seem to linger around... sometimes with snowfalls showing up in late March or early April. 

And now given our weather of the last week, I am wondering what ever happened to spring! We have been in the 80's and 90's here for almost the past week. Which wouldn't be that big of a deal if our central air hadn't happened to go out just less than a week ago. Everyone else around here must be having the same issue as we have been on the wait list for a heating & cooling repairman for the past 5 days. 

Needless to say, I have been desperate to find ways for us to cool off during the day. I mean, you can only spend so many hours at the mall play area and at the local library. ;) My tasty solution? Cool and creamy homemade ice cream outside on the back deck...

Since summer seems to have showed up early here, it has definitely put me in the mood for some summer flavors. One of my favorite summertime treats is grilled sweet corn. The only problem is that local corn isn't in season around here yet. Lucky for me (and you too!), Sunshine Sweet Corn from Florida is fresh and ready now! :)

I have been looking for an excuse to try and recreate a sweet corn ice cream I have had before when traveling out of town. Seeing delicious, fresh Sunshine Sweet Corn at my local grocery store combined with these unseasonably warm temperatures has provided me with just the reason that I needed. This no-churn homemade ice cream is infused with freshly grilled sweet corn and then swirled with a fresh strawberry sauce.

Making fresh grilled corn is super simple, folks. Pull the husk down on each ear of fresh Sunshine Sweet Corn (but do not pull it all the way off!) and then remove the silk from each one. Place the husks back over the ears of corn. Fill your kitchen sink with cold water and add in about 1-2 tablespoons of Kosher salt. Add the de-silked ears of corn to the water in the sink and soak for around 10 minutes. While the corn is soaking, turn on your grill to medium-high. Place the soaked ears on the grill and grill for around 20 minutes, turning every 5 minutes or so. Allow to cool to the touch and husk. Easy, peasy! Just be sure to set aside and save one of those grilled ears of corn to make this delicious homemade ice cream.

Oh, and if you need something to keep the kiddos entertained, put them to work husking the corn for you... ;)

Grilled Sweet Corn & Strawberry Ice Cream

Prep Time: 5 hours to overnight
Cook Time: 15 minutes
Ingredients (8 servings)
  • 1 ear of fresh grilled corn, shucked with kernels cut from cob
  • 12oz can of evaporated milk
  • 1/2 cup sweetened condensed milk
  • 1 cup heavy cream
  • 4oz of whipped topping, thawed
  • 1 cup of strawberries, hulled & sliced
  • 1/3 cup sugar
Instructions
In a large saucepan, combine both the milks, the heavy cream, the corn kernels, and the cob broken in half. Slowly bring the mixture to a boil, stirring often. Once boiling, remove from heat and allow the corn cob to steep in the ice cream base for 1 hour.

After an hour, remove the broken cob from the mixture and throw out. Using an immersion blender, slightly puree the corn kernels in the mixture.

Chill the ice cream base in the refrigerator for at least one hour.

While the base is chilling, prepare the strawberries for the ice cream. In a small saucepan, combine the sliced strawberries and sugar. Heat over medium-high heat for 5-10 minutes until the mixture is bubbling and thickens. Allow to cool completely.

Fold the thawed whipped topping into the sweet corn ice cream base. Place the chilled ice cream base in a freezer safe container and freeze for one hour. Mix with a rubber spatula, and then return to the freezer for another hour. Then mix again, being sure to scrap down the sides of the container. Freeze one more hour and then fold in the cooled strawberries. Freeze for at least 1-2 hours more, preferably overnight.

Homemade ice creams do freeze harder than store bought ones. Allow the ice cream to sit out at room temperature for 15-20 minutes before scooping out.

Scoop and serve in dishes or on your favorite cones.
Enjoy!

This Grilled Sweet Corn & Strawberry Ice Cream is the perfect creamy taste of summer a little bit early. Even though the heat here has been almost unbearable at times, this ice cream has sure made some hot afternoons a little easier on us.
