Ever since I made my White Chocolate Peeps Cookiewiches for Easter earlier this year, I have kind of had a thing for coming up with decadent cookiewiches just for special occasions and holidays.
My Easter cookiewiches were followed up a few months later by the Blue Velvet & Raspberry Buttercream Cookiewiches I made for the 4th of July.
And since it has been over 5 months since I have posted a new cookie-wich recipe, I thought why not come up with one that would be perfect for celebrating New Year's Eve with? ;)
I had a vision in my head for exactly how I wanted these cookie-wiches to look, but I ran into one tiny snag- I couldn't find the exact sparkling gold and silver sugars I had pictured in my mind! I searched my local craft store and all the area grocery stores. I even searched Amazon to no avail.
Then I remembered my good friends over at Chocoley and thought why not click on over there and take a look? And sure enough they had exactly what I was looking for in their Gold & Silver Sheen Metallic Sugar Crystals Set! Sparkling perfection, folks.
These Sparkling Champagne Cookie-wiches are rich, decadent, and fun, just like how every New Year's Eve celebration should be... :)

Sparkling Champagne Cookie-wiches
A rich champagne buttercream is sandwiched between two thick & soft sparkling sugared cookies in these Sparkling Champagne Cookie-wiches.
prep time: 20 min cook time: 10 min total time: 30 min
ingredients:
- 1 box of white cake mix
- 1 large box of vanilla instant pudding
- 2 eggs
- 1 stick (1/2 cup) of unsalted butter, softened
- 1/4 cup champagne, prosecco, or sparkling wine
- Sparkling gold & silver sprinkles
For the buttercream
- 1 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 tsp vanilla extract
- 2-3 tbsp champagne, prosecco, or sparkling wine
instructions:
How to cook Sparkling Champagne Cookie-wiches
- In a large bowl, combine the cake mix, pudding mix, eggs, butter, & champagne. Mix well.
- Pour some of the sparkling gold & silver sprinkles onto a small plate. Roll the cookie dough into 20-24 generous tablespoon sized balls. Press the top of each cookie dough ball into the sprinkles. Place sprinkle side up on the prepared baking sheet(s). Flatten each cookie dough ball slightly with your hand.
- Bake at 350 for 8-10 minutes or until the cookies are slightly golden brown along the edges. Allow to cool on the baking sheet for about 2 minutes, then transfer to a wire rack to cool completely.
- When the cookies have cooled, prepare the champagne buttercream frosting.
- Add the butter to a large mixing bowl and beat on medium speed for 3-4 minutes until light and creamy. Now beat in the vanilla. Beat in the powdered sugar one half cup at a time. Add in the champagne 1 tablespoon at a time until your frosting reaches your desired consistency.
- Place the frosting in a pastry bag using a tip with a wide opening. Pipe the frosting into the middle of one of the cooled cookies, sprinkles side down. I piped mine in a swirl, leaving a little room along the outside edge of the cookie. Place another cookie, sprinkle side up on top of the frosting. Press down gently. Repeat this for the remaining 9-11 cookie pairs.
- ** You can also just spread the frosting on- maybe 2 tbsp per cookie-wich. It won't be as pretty, but it will taste just as good! :)
- Store in an airtight container in your fridge for up to 5 days.
