I am partnering today with Fleischmann's Yeast & Karo Syrup to bring you all this recipe for my mama's family favorite Clover Yeast Dinner Rolls.






When it comes to the holidays, I think we all have that one recipe or two that when made always bring back memories of our childhood.  For me, that is my mama's clover yeast dinner rolls.






They were made for almost every special occasion, including holiday dinners like Thanksgiving and Christmas.  






I remember watching her mix the dough, and then kneading it, and punching it down, and then placing it in a well-oiled big green Tupperware mixing bowl to rest and raise.  And when it was ready, she would roll the dough into little balls and then arrange them 3 to a tin in a muffin pan.






The whole process fascinated me and intimidated me all at the same time.  But there was nothing like pulling apart one of her warm clover yeast dinner rolls and smearing some butter on it, and popping each third in my mouth as the butter melted...

I have always wanted to make my mama's clover yeast dinner rolls for myself, but I have always been so intimidated of using yeast in recipes. Like most people, I have had my fair share of experiences where the dough didn't rise quite right and I was left with dense or tough bread and rolls.






But armed with Fleischmann's RapidRise Highly Active Yeast and a little Karo Syrup, I asked my mom if I could borrow her well-loved cookbook so I could attempt to make her rolls for myself.  






She was actually slightly appalled when I told her I also wanted to photograph the cookbook and share it in my post.  She told me that it was much too ugly for that. Ummmmm... can you all believe that? 






I mean, just look at that cookbook up there! It is just aged and well loved which to me is beautiful. And you can certainly tell that this recipe is my mom's favorite and most used from her cookbook. If you set it down and open it, it automatically falls to this page for the yeast dinner rolls... :)

I only made a few tweaks to the original yeast dinner roll recipe that my mom makes. Since I used Fleischmann's RapidRise Highly Active Yeast, I was able to shave about 30 minutes off of the first rise time.  






And while my mom usually just brushed the tops of the rolls with melted butter, I also added in a little Karo Syrup. It gave a nice little extra touch of sweetness to these dinner rolls...

These soft, pull apart Clover Yeast Dinner Rolls need to make an appearance on your dinner table asap.

prep time: 1 hour & 30 min cook time: 20 min total time: 1 hour & 50 min

ingredients:

  • 1 package of Fleischmann's RapidRise Highly Active Yeast
  • 1/4 cup warm water
  • 1 cup milk, scalded
  • 1/4 cup sugar
  • 3 tbsp shortening (I used butter flavored.)
  • 1 tsp Kosher salt
  • 3 cups flour
  • 1 egg, well beaten
  • 1 tbsp Karo Light Corn Syrup
  • 1 tbsp unsalted butter

How to bake Clover Yeast Dinner Rolls

  1. In a small bowl, soften the yeast in the warm water.
  2. In large bowl, combine the hot milk, sugar, shortening, and salt. Cool to lukewarm.
  3. Blend in 1 cup of flour and beat until smooth. Stir in the yeast/water mixture. Add another cup of the flour and beat again. Beat in the egg. Beat in the last cup of flour to make a soft dough.
  4. Turn the dough onto a lightly floured surface. Cover with a clean towel and let it rest 5-10 minutes.
  5. Knead the dough until smooth & elastic. Grease a large bowl with a little olive oil (about 1 tbsp). Form the dough into a ball, place in the greased bowl, and then turn the dough to bring the greased side to the top. Cover and let rise again until almost doubled- about 10 minutes.
  6. Punch down the dough, pull the outer edges to the center, and turn completely over in the bowl. Cover and let rise again until almost doubled- about 45 minutes.
  7. Preheat your oven to 425 degrees.
  8. Punch down the dough again and turn onto a lightly floured surface.
  9. Grease the bottoms of the cups in a 12 cup muffin tin. Shape the dough into 1 inch balls. Place 3 dough balls into each muffin cup, forming a 3-leaf "clover".
  10. Combine the butter & Karo syrup in a small microwave-safe bowl. Heat on high until the butter is melted- about 30 seconds. Mix well and then brush the tops of each clover roll with the butter/Karo mixture.
  11. Cover and let rise again on top of the warm stove for an additional 10-15 minutes.
  12. Bake for 15 to 20 minutes, until the tops and edges of the rolls are golden brown.
  13. Allow the rolls to cool in the muffin pan for at least 10 minutes before removing, Serve warm with butter.
  14. Enjoy!
