If there is one thing I can count on each and every holiday season, it will be my teenage son's love for anything and everything chocolate and peppermint.  This has been going on for years now... you know, back when he was actually much shorter than me. ;) 







So each and every holiday season, I strive to create a new chocolaty, minty sweet treat that I just know that he will love. 







But this year I took it just a tiny step further and added his favorite flavor combo to one of his all-time favorite cookies- no-bakes!







And after making these, I kind of had to step back and scratch my head and wonder why this was the first time I had ever thought to make Chocolate Peppermint No-Bake cookies...







As soon as I had the idea for this recipe churning in my head, I headed out to my local Target to pick up a package of Quaker Quick Oats...










I love that Quaker Quick Oats are made with whole grain oats, but I am also loving their limited edition winter canisters! Ahem... you can find Quaker Oats in this special packaging exclusively at Target for a limited time only, folks. :)  







Once I gathered all the ingredients, I set to work making #MyOatsCreation- these delicious holiday perfect no-bake cookies.  I guess I shouldn't really say "work". These cookies come together so easily that whipping up a batch of these can hardly be constituted as work... ;)

These Chocolate Peppermint No Bake Cookies unequivocally received the seal of approval from my son. Chocolaty, with the perfect texture thanks to the Quaker Quick Oats, with just a hint of mint.  And while the crushed candy canes don't have to be used in this recipe, they certainly give these cookies a little extra peppermint kick and make them holiday pretty. :)

Chocolate Peppermint No-Bake Cookies

A classic cookie gets a minty makeover perfect for the holidays in these Chocolate Peppermint No-Bake Cookies.

prep time: 10 min cook time: 5 min total time: 15 min

ingredients:

  • 1 1/2 cups sugar
  • 1 1/2 sticks of unsalted butter
  • 1/2 cup milk
  • 4 tbsp cocoa powder
  • 3/4 tsp peppermint extract
  • 3/4 cup semi sweet chocolate chips
  • 3 cups Quaker Quick Oats
  • 2 candy canes, crushed

instructions:

How to make Chocolate Peppermint No-Bake Cookies

  1. In a large saucepan, combine the sugar, butter, milk, and cocoa. Heat over medium-high heat until the butter is melted, stirring often. Bring to a boil and allow the mixture to boil for 3-5 minutes.
  2. Remove from the heat and immediately stir in the peppermint extract and chocolate chips until the chips have melted. Mix in the quick oats until well coated.
  3. Drop by rounded mounds onto a sheet of waxed paper. Immediately sprinkle with the crushed candy canes and press them gently into the tops of each cookie.
  4. Allow to cool completely.
  5. Store in an airtight container at room temperature for up to 5 days.
  6. Enjoy!
