When you have a child under 3, everything seems to be "scary". My two and a half year old daughter is presently at a stage where spiders, skeletons, and occasionally zombies are on her "too scary" list.

(Well, not always zombies. In fact, most of the time she loves them. My husband and I will take full responsibility for that since we have been watching The Walking Dead since she was in the womb. ;) )

This Halloween will be her first where she actually kind of gets what is going on. So this year I wanted to make a not-so-scary treat for her that would still be Halloween perfect.

My inspiration for these Vampire Mickey Pudding Cups comes from her love of all things Disney... And of chocolate pudding and Oreo cookies, of course. ;)

I have to be honest- Figuring out how exactly to assemble my Mickeys was a bit of a challenge.  But I finally found a method that worked and ensured that Vampire Mickey's ears would stay in place... :)

Prep Time: 15 minutes
Cook Time: None
Ingredients (Depends on how many you need)
    For the Vampire Mickeys
    • Regular Oreos (Not Double Stuff)
    • Mini Oreos
    • chocolate candy melts
    • candy eyes
    • white frosting (I just used store bought to make it super easy)
    • Frosting tips/bags
For the pudding cup treat packs
    • Snack Pack Pudding Cups (in your favorite flavors- we used chocolate)
    • Halloween themed or colored cupcake liners
    • Plastic spoons in fall/Halloween colors
    • Halloween treat bags or clear baggies
    • Fall/Halloween colored or themed ribbon or baker's twine
    Instructions
    To make the Vampire Mickeys-
Decide how many Vampire Mickeys you will need. Will you be making these for a small get-together, a school party, or to hand out at trick-or-treat?
Separate as many large Oreos as you need Mickeys. Make sure the cream filling stays intact on one side of the cookie. Then separate 1 mini Oreo for each Mickey Vampire you need. Scrape off the cream filling from the minis. Set aside on a large sheet of waxed paper.

Prepare your chocolate candy melts according to the package directions. (I picked up one of those nifty bottles made for melting and then piping the melts at my local craft store.)
Place some of the white frosting into an icing bag fitted with an icing tip with a small round opening. Set aside.

    To assemble the Vampire Mickeys-
Pipe a little of the melted chocolate to the bottom of the front of the mini Oreos (aka, the ears). "Glue" them to the inside of the Oreo half without cream filling. Press down and allow to set up for a few minutes. Gently press the other half of the Oreo, cream side down over the bottom of the mini Oreos. Pipe the white frosting into two dots for the eyes. Affix your candy eyes over the frosting dots. Now pipe two small vertical lines where the mouth would be to make Mickey's vampire fangs. Allow to set up for at least 20 minutes. Repeat this for each Vampire Mickey.

To assemble the Vampire Mickey Snack Pack Pudding Cup Packs
Place each Snack Pack pudding cup down inside a Halloween themed cupcake liner. Place the cup with the liner down into a treat bag or plain plastic baggies. Place 1 Vampire Mickey on top of the pudding cup. Slide one plastic spoon, handle up behind the Snack Pack pudding cup. Gather at the top and tie with a ribbon or with baker's twine.
    Hand out, serve, and enjoy!

Little miss just loved these Vampire Mickeys & dipping them into her Snack Pack Chocolate Pudding Cup! :)  And I could feel good about giving her this sweet treat since a cup of Snack Pack pudding has the same amount of calcium as an 8 ounce glass of milk.

With all the sweet treats and candies out there during the Halloween season, the are definitely bigger evils out there.
