Black, Bleu, & Bacon Rice Casserole

Ingredients (6 servings)
- 1 bag of Success® White Rice (boil-in-bag rice)
- 1 tbsp canola oil
- 1 lb of lean ground beef
- 1 medium onion, chopped
- Your favorite burger seasoning (I used a Chicago steak seasoning.)
- 1 10.5oz can of cream of mushroom soup
- 1/2 cup bleu or Gorgonzola cheese
- 3/4 cup panko bread crumbs
- 1/4 tsp black pepper
- 1/2 tsp Kosher salt
- 3 tbsp unsalted butter, melted
- 1/4 cup bleu or Gorgonzola cheese
- 5 slices of bacon, cooked & roughly chopped
Instructions
Preheat your oven to 350 degrees.
Prepare the bag of Success® White Rice (boil-in-bag rice) according to the box directions.
While the rice is starting to cook, heat the canola oil in a large skillet over medium-high heat. Once the oil is heated, add the ground beef and chopped onion. Season with your favorite burger or steak seasoning and cook until browned. Drain any fat from the browned ground beef & onions and set aside.
Spray the inside of a casserole dish with cooking spray. Add the browned ground beef, the cream of mushroom soup, and the cooked rice to the casserole dish. Mix well. Fold in the 1/2 cup of bleu cheese.
Bake for 15 minutes at 350. While the casserole is baking for the first 15 minutes, prepare the breaded topping.
In a small bowl, whisk together the panko crumbs and the pepper & salt. Pour in the melted butter and mix well. Fold in the remaining 1/4 cup of bleu cheese and the cooked, chopped bacon.
After the casserole has baked for the first 15 minutes, evenly spread the breaded topping over it. Bake for an additional 15 minutes, until the panko crumbs are golden brown.
Allow to rest for 5 minutes before serving.
Dish up and enjoy!

My family loved casserole. And surprisingly, the biggest fan of this mama's newest casserole creation was little miss! ;) My sometimes finicky eater gobbled up this Black, Bleu, & Bacon casserole.
And as for the guys in my family? The husband and the teenager both gave it a big thumbs up. I mean, how could I really go wrong with serving an easy-to-make rice casserole that tastes just like one of their favorite restaurant burgers?
