Chocolate Covered Raisin No-Bake Cookies

Is it just me or does it always seem to be a challenge to find an after school snack that both the kiddos and the parents can agree on?  Or how about when the little ones beg for a sweet treat in their lunch boxes?
They would prefer to pack sugar filled cookies and candy. Or snack on chips while sitting down to do their homework after school.  But we parents cringe at the very thought.

Well, I have come up with perfect sweet snacking solution that is both mom/dad and kid-approved- Chocolate Covered Raisin No-Bake Cookies! :)
Now before you blast me for making no-bake cookies, know that I was able to greatly reduce the sugar in these thanks to some help from California Raisins.   Most no-bake cookie recipes I have seen have at least two cups of sugar in them!
Two cups, folks.
By adding naturally sweet California Raisins- both whole & pureed, I was able to cut the sugar needed for these delicious no-bake cookies by over half! :)

California Raisins have zero fat, no cholesterol and no added sugar. Plus, raisins offer 9% of your daily fiber and potassium, and 6% of your daily iron (per quarter cup serving).

Chocolate Covered Raisin No-Bake Cookies

Prep Time: 10 minutes
Cook Time: 2-3 minutes
Ingredients (Approx 18 cookies)
  • 2/3 cup sugar
  • 1 stick unsalted butter
  • 1/2 cup coconut or almond milk
  • 1/2 cup California Raisins, blended & pureed with a little of the milk
  • 4 tbsp cocoa powder
  • 1 tsp vanilla
  • 3 cups of quick oats
  • 1/2 cup of whole California Raisins
Instructions
In a heavy saucepan bring to a boil, the sugar, cocoa powder, butter, milk, and pureed raisins. Let boil for 2-3 minute then stir in the vanilla.

Remove the saucepan from the heat and stir in the oats. Then fold in the 1/2 cup of raisins.
On a sheet of waxed paper, drop mixture by the tablespoonfuls. Allow the cookies to cool completely and harden.
**To speed up the cooling and hardening process, feel free to pop the cookies into the fridge for 20-30 minutes.

Store in an airtight container for up to 1 week.

Now I have to be honest with you all- I am not always a fan of raisins in cookies. But I actually loved the addition of California Raisins in these no-bake cookies!  I have a feeling it might have had something to do with how perfectly the raisins paired with the chewiness of the cookies... and maybe the chocolate. ;)
And the kiddos? They loved them too! Both the 2 year old, the 16 year old, and the 37 year old gobbled them up... (Yes, I did just lump my husband in with the "kiddos".)
