If the Candied Bacon S'mores Pizza recipe I posted yesterday didn't convince you of the merits of having a little bacon for dessert, then these Bacon & Pretzel Chocolate Chip Cookies certainly will! ;)
The secret to these cookies being so soft and thick? Cake mix and pudding mix, folks.
Some call it cheating. I call it genius.
And then when you throw in some gooey chocolate chips, salty bacon, and crunchy pretzel pieces?
Irresistible!
These cookies pair perfectly with a cold glass of milk.... or maybe a good beer. ;)
Bacon & Pretzel Chocolate Chip Cookies

Cook Time: 6-8 minutes
Ingredients (24 cookies)
- 4-5 slices of crispy bacon, chopped (reserve the bacon drippings & grease)
- 1 box of yellow cake mix
- 1 small box of instant vanilla pudding
- 2 large eggs
- 1 stick of unsalted butter, melted
- 1 tbsp reserved bacon grease
- 3/4 cup semi-sweet chocolate chips
- 1/2 cup pretzels, roughly crushed
Instructions
Cook your bacon according to your preferred method. To learn how to bake your bacon, check out my post on How to Bake Perfectly Crisp Bacon. Be sure to reserve some of the bacon drippings.
Preheat your oven to 350 degrees. Line baking sheet(s) with parchment paper or a silicone baking mat. Set aside.
In a large bowl, combine the cake mix, pudding mix, eggs, butter, & bacon grease. Mix well.
Fold in the chocolate chips, chopped bacon, and crushed pretzel pieces.
Roll the cookie dough into 24 tablespoon sized balls. Place the cookie dough balls onto your prepared baking sheet(s) at least 2 inches apart. Flatten each cookie dough ball slightly with your hand.
Bake at 350 for 6-8 minutes or until the cookies are slightly golden brown along the edges. Allow to cool on the baking sheet for about 2 minutes, then transfer to a wire rack to cool completely.
Store in an airtight container at room temperature for up to 4 days.

Every time I throw something out of the ordinary into what should be an "ordinary" recipe, my husband always gives me that raised eyebrow of doubt. Yes, he was skeptical of the bacon in the cookies.
But after gobbling down one (or two or three), he was beyond convinced.
Of course, I knew all along that these Bacon & Pretzel Chocolate Chip Cookies would be a home run. ;)
