Father's Day is less than two days away, folks. If you don't have a plan yet, let me help you out with that right about now with these Brown Sugar Glazed Bacon Butter Pecan Sweet Rolls.

Yes, I said brown sugar. 
And pecans.
And sweet rolls.... all in the same recipe title. 

I am almost certain that there is no way that you could possibly go wrong making these for dad for Father's Day breakfast or brunch.
I haven't met a man yet who would turn down a homemade sweet roll... or bacon, for that matter. ;)

I tested these babies out on both my husband and my dad- the two most important daddies in my life- and received a tasty thumbs up from both of them. So, it has been daddy, husband, and grandpa approved. That has to be better than the Good Housekeeping seal of approval, right?

Brown Sugar Glazed Bacon Butter Pecan Sweet Rolls

Prep Time: 2 hours
Cook Time: 20-25 minutes
Ingredients (1 dozen sweet rolls)
  • 1 envelope active dry yeast
  • 1 1/4 cups warm water
  • 1 3/4 cups Butter Pecan cake mix
  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 5-6 slices of bacon
  • 1 tbsp brown sugar
For the filling
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • 6 tbsp unsalted butter, softened
  • 1/2 chopped pecans
For the brown sugar glaze
  • 4 tbsp unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup half & half
  • 1/2 tsp vanilla
  • pinch of salt
Instructions
In a small bowl, add the yeast to the warm water. Let sit until the yeast is dissolved.
Meanwhile in a large bowl, whisk together the cake mix, flour, and salt. Add in the yeast/water mixture and mix well.
Cover with a clean cloth and allow to rise for 1 hour.
Punch down the dough and then cover and allow it to rise for another 30 minutes on top of your stove.

While the dough is rising, prepare you bacon. Line a RIMMED baking sheet with foil. Place your bacon in a single layer over the foil. Sprinkle the bacon slices with the 1 tbsp of brown sugar. Place the baking sheet in the oven. Turn on your oven to 425 degrees. Bake for 20-25 minutes until the bacon is done to your desired crispiness. Remove from the oven and transfer the cooked bacon slices to a paper towel lined plate. Allow to cool.
Turn your oven down to 350 degrees.
**Baking the bacon is great for helping the dough rise better- bonus!

Spray 2 round cake pans with cooking spray. Set aside.

In small bowl, combine the brown sugar, cinnamon, & 6 tbsp butter. Set aside.

Once the dough has risen for the second time, turn out onto a well floured surface. Knead 5-7 times, and then roll out into a rectangle to about 1/4 inch thick.
Spread the melted brown sugar-cinnamon mixture evenly over the rectangle of dough. Then evenly sprinkle with the chopped pecans.
Starting with the bottom of the rectangle, roll the dough lengthwise into one long roll. Cut into 12 even slices.

Place swirl side up in the prepared pans- 6 rolls to each cake pan. Cover with the cloth and set on top of the warm stove.
Allow to rise for another 20-30 minutes.

Once they have risen for the third time, bake for 15-25 minutes or until the rolls are set and lightly golden brown.
Meanwhile, chop the bacon.

Allow to cool at least 10 minutes before topping with the glaze and chopped bacon.

To make the glaze- whisk together the 4 tbsp butter, brown sugar, half & half, & salt in a small saucepan. Bring to a rolling boil over medium heat. Boil for 1 minute and then remove from the heat. Whisk in the vanilla extract.

Top the rolls with the chopped bacon and then drizzle the glaze over the baked sweet rolls.

** If you need these for a larger crowd, you could use the entire box of cake mix & double the ingredients listed above. Using the entire box will make 2 dozen sweet rolls.
