So by now, the kiddos are either out of school for the summer or will be very soon. My son's last day as a high school freshman will actually be tomorrow.
*sigh*
How has my first baby already flown through his first full year of high school??
My mind keeps thinking ahead to 3 years from around now when he will be GRADUATING from high school...
Uhhhhhh... what!?!
I am already anticipating what I know I will inevitably hear about a million times this summer from my son...
"I'm hungry. Will you make me something?"
"Will you make me some lunch?"
"When's dinner? Is there anything to snack on?"
I have a tasty solution ready for the teenage son munchies with these super Easy Pepperoni Pizza Waffle Pockets.
So easy that he could make these for himself...
If I decide I want to trust him with pizza sauce and gooey cheese in my waffle maker.
Hmmmmmmm... let me think on that one. ;)
Easy Pepperoni Pizza Waffle Pockets

Prep Time: 10 minutes
Cook Time: 1- 1 1/2 minute per waffle pocket
Ingredients (8 pizza pockets)
- One 16 oz tube of jumbo refrigerated biscuits (like Pillsbury Grands!)
- Pizza sauce
- Shredded mozzarella cheese
- Pepperoni
- Any additional pizza toppings that you might like
Instructions
Plug in and heat up your waffle maker or iron. While it is heating up, take the biscuits out of the tube and cut each biscuit in half through the middle so you essentially have 2 thinner biscuits per biscuit.
On a plate or tray, set out one half of one of the biscuits. Add 1 tbsp of pizza sauce, 2 pepperoni slices, & 1 tbsp of shredded mozzarella to the center of the biscuit. Place the other half of the biscuit on top and pinch around the edges.
Place the filled biscuit into the center of the waffle maker & press down gently. Leave it in the waffle maker for 1 to 1 1/2 minutes until the outside of the biscuit is golden brown & crispy.
Repeat this with the remaining 7 halved biscuits.
Serve while still warm.

**Be careful not not overfill the biscuits. There will be some oozing of the filling anyways, but if you overfill you may lose all of your pizza filling to the waffle iron grid!

I will definitely be keeping this one in my go-to summer recipe arsenal.
