I told you all earlier this week when I posted my recipe for S'mores Bunny Graham Bars that I felt like I owed you all some serious Easter recipes this year since I pretty much slacked in that department last year.
I am making good on that promise with this recipe for White Chocolate Peeps Cookiewiches.
Seriously. What says Easter more than Peeps, my friends? ;)
You may be scanning the photo above wondering where in the heck are these Peeps I am talking about. Well folks, I melted them down and turned them into that pretty pink buttercream you see sandwiched between those soft, thick cookies there. Yep, the Peeps are in the frosting! :)
And don't get me started on the cookies. Wowzers!
I originally wanted to go with a coconut cookie for these, but both stores I visited that day did not carry coconut instant pudding.
I mean, what store doesn't carry instant coconut pudding this time of year??
But alas, I happened upon a box of Hershey's White Chocolate instant pudding & it was delicious destiny.
Although, I still think that these cookiewiches would be fabulous with a coconut flavor. But the white chocolate is definitely a must try...

White Chocolate Peeps Cookiewiches
A Peeps marshmallow buttercream is sandwiched between two white chocolate pudding cookies in this perfect sweet treat for Easter or spring.
Prep time: 20 min Cook time: 8 min Total time: 28 min
Ingredients:
- 1 box of french vanilla or white cake mix
- 1 small box of white chocolate pudding (I used Hershey's.)
- 2 eggs
- 1 stick of unsalted butter, melted
- Spring colored sprinkles (optional)
For the Peeps frosting
- 1 stick unsalted butter, room temperature
- One 15 pack of Peeps (any kind or color)
- 1/2 tsp vanilla extract
- 3 cups powdered sugar
- 4-6 tbsp milk
Instructions:
How to make White Chocolate Peeps Cookiewiches
- Preheat your oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- In a large bowl, combine the cake mix, pudding mix, eggs, and butter. Mix well.
- Pour some of the spring colored sprinkles onto a small plate. Roll the cookie dough into 24 tablespoon sized balls. Press the top of each cookie dough ball into the sprinkles. Place sprinkle side up on the prepared baking sheet(s). Flatten each cookie dough ball slightly with your hand.
- Bake at 350 for 6-8 minutes or until the cookies are slightly golden brown along the edges. Allow to cool on the baking sheet for about 2 minutes, then transfer to a wire rack to cool completely.
- When the cookies have cooled, prepare the Peeps frosting.
- Place the 15 Peeps in a large microwave safe bowl. Zap in the microwave for about 30 seconds. Give it a stir. There shouldn't be any lumps or Peep clumps. If there is, zap again in 10 second increments, stirring after each time until they are smooth.
- Transfer the melted Peeps to large mixing bowl and add in the butter. Beat on medium speed for 3-4 minutes until well combined and light and creamy.
- Now beat in the vanilla.
- Beat in the powdered sugar one cup at a time.
- Add in the milk, one tablespoon at a time until it is at a good piping consistency. You may not need to use the full 6 tablespoons of milk.
- Place the frosting in a pastry bag using a tip with a wide opening. Pipe the frosting into the middle of one of the cooled cookies, sprinkles side down. I piped mine in a swirl, leaving a little room along the outside edge of the cookie. Place another cookie, sprinkle side up on top of the frosting. Press down gently. Repeat this for the remaining 11 cookie pairs.
- ** You can also just spread the frosting on- maybe 2 tbsp per cookiewich. It won't be as pretty, but it will taste just as good! :)
- Store in an airtight container at room temperature for up to 4 days.
- Enjoy!
These cookiewiches are not only perfect for Easter, but their pretty pastel colors lend themselves perfectly for the sweet treats table at a baby shower.
Just use pink Peeps & sprinkles for a girl or blue Peeps and sprinkles for a boy!
