Frozen Coconut Chai Latte {& A Silk #yaywater Giveaway!}

I think most of us know by now that non-dairy alternatives to milk- like Silk's delicious line of soy, coconut, & almond milks- can provide a lot of us with a healthy, lower calorie option to traditional dairy milk. And it is also a huge bonus for those of us with lactose intolerance and dairy allergies!

Recently, I have been incorporating a lot more Silk almond and coconut milks into my daily diet and into the recipes that I have been posting to the blog. I love having a tasty, waistline friendly alternative to traditional dairy. I can feel good about what I am putting in my body, for cutting unnecessary calories, and now for helping to conserve our planet's water!

One of my favorite warm weather treats is a frosty, creamy Frozen Chai Latte. But I decided to make this coffee house favorite dairy free (& more earth friendly!) & gave it a tropical twist by adding some coconut flavor to it with the help of Silk Coconutmilk...


Frozen Coconut Chai Latte

Prep Time: 15 minutes


Cook Time: none
Ingredients (1 latte)
  • 1 tea bag of your favorite chai tea (steeped in 1 cup of boiling water to your desired strength)
  • 2/3 cup crushed ice
  • 2/3 cup Silk Coconutmilk
  • sweetener of your choice, if desired
  • 1/2 cup of coconut whipped cream (recipe link below)
  • 1/4-1/2 cup of toasted coconut (recipe is below)
For the coconut whipped cream
  • One 15oz can of lite coconut milk
  • 1-2 tbsp of sugar, more or less to taste
Instructions
Steep your chai tea bag in the 1 cup of boiling water to your desired strength. Let cool completely. (I like to steep mine the night before & then cover & refrigerate overnight.)

For the toasted coconut
Preheat your oven to 300 degrees. Line a baking sheet with parchment paper. Spread 1/4 to 1/2 cup of shredded coconut evenly on the parchment paper. Toast for about 4-6 minutes, stirring every couple of minutes & checking often. Keep an eye on out! Coconut can burn very quickly. Let cool & set aside.

To make the coconut whipped cream, I followed THIS RECIPE from theKitchn. I just omitted the vanilla extract so the coconut flavor would shine more. Click on over to get the simple recipe! :)

Combine the ice, cooled chai tea, Silk Coconutmilk, sweetener, 1/2 cup of coconut whipped cream, & 1 tbsp of toasted coconut in your blender. Blend until smooth & creamy.

Top with more of the coconut whipped cream & toasted coconut, if desired.

This Frozen Coconut Chai Latte is refreshing and delicious! It is definitely going to be one of my go-to's as the temperatures continue to rise this spring and summer.
And the coconut whipped cream? Yum! You do have to use canned coconut milk to make it though. The coconut milk in the carton is just not thick enough to get it to whip. I have heard many say that you have to use full fat coconut milk to make this, but I used lite and it worked perfectly. :)
