Confession time.... I don't like downing Irish Car Bombs. I can never chug them fast enough, & most of you all probably know what happens if they are not chugged properly. It's isn't pretty.
I pretty much gag on all whiskey and scotch.
But Irish Cream?
You could could say that Bailey's & I get along well. And one of my favorite drinks to make with Bailey's is a creamy mudslide...
Traditionally frozen mudslides are made with vanilla ice cream, but I wanted to give this spiked milkshake a St. Patrick's Day twist by using mint chocolate chip ice cream instead.
I also gave it a little extra chocolate kick by using chocolate vodka instead of plain vodka.
This Green Mint Chip Mudslide is green, Irish (ahem... Bailey's), and creamy & delicious... Much better than doing shots of whiskey if you ask me... ;)
Green Mint Chip Mudslide

Cook Time: None
Ingredients (1 milkshake)
- 3 scoops of your favorite mint chocolate chip ice cream, slightly softened
- 1/2 oz (approx 1/3 of a shot glass) of chocolate vodka
- 1/2 oz of Kahlua (coffee flavored liqueur)
- 1/2 oz Bailey's Irish Cream
- 1/3 cup milk
- Whipped cream & chocolate sprinkles, for topping (optional)
Instructions
Add all the above listed ingredients into your blender and blend until smooth. Pour into a glass and top with whipped cream and chocolate sprinkles, if desired.
Enjoy!
**Note- if you do not have chocolate vodka, feel free to use regular vodka instead and just add a few squirts of chocolate syrup.
