I am pretty much a fan of any delicious breakfast I can assemble the night before, pop in the fridge, and then just bake the next morning. You know, pretty much any easy breakfast casserole. ;)
I have created a few overnight french toast casseroles in my day by now, but I have to admit it- this Overnight Red Velvet Cake French Toast Casserole is by far my favorite!
It is rich. It is decadent. It is creamy. It is absolutely perfect for Valentine's Day weekend!
I used day old Challah bread in my casserole, but you could easily use French or Italian bread if you cannot find Challah at your local bakery. But trust me- if you can get your hands on some Challah, buy it! It makes the best french toast casseroles in my book. ;)
If you are planning on having a night out on the town for Valentine's Day this Friday, just throw this red velvet french toast casserole together, cover tight with plastic wrap, and slide in the fridge before getting ready for your big night out.
And don't skip making the Homemade Cream Cheese Whipped Cream in the morning! Trust me on this- it only takes minutes & it really is amazing with this french toast casserole...

ingredients:
For the french toast casserole
- 1.1 loaf day old Challah bread
- 5 eggs, beaten
- 1 (12 oz.) can of evaporated milk
- 1 1/2 tsp vanilla
- 1/2 cup sugar
- 1 cup of boxed red velvet cake mix
- 1/2 cup semi sweet chocolate chips
For the homemade cream cheese whipped cream
- 2 oz. of cream cream, softened
- 3 tbsp sugar
- 1 cup heavy cream
- Valentine's sprinkles (optional)

How to make Overnight Red Velvet Cake French Toast Casserole
- Preparation the night before:
- Slice the Challah bread into thick slices. Then cut each slice into half. Arrange the Challah slices evenly in a greased 13x9 baking pan. Set aside.
- In a large bowl, whisk together the eggs, evaporated milk, vanilla, sugar, and red velvet cake mix until well combined.
- Sprinkle half of the chocolate chips over top of the bread slices in the baking pan. Pour the batter over top. Then sprinkle the remaining chocolate chips over top. Push down the bread slices to make sure they are getting soaked in the batter.
- Wrap the pan tightly in plastic wrap and place in the fridge overnight.
- In the morning, preheat your oven to 350 degrees. Once heated, remove the plastic wrap from the pan and bake for 40-45 minutes until the center is set and the edges are crisp.
- Let cool to warm.
- For the homemade cream cheese whipped cream:
- While the french toast casserole is baking, place a small metal mixing bowl and the beaters of a hand mixer in the freezer for 10 minutes.
- Once chilled, beat the cream cheese and sugar together until creamy on medium speed. Reduce the speed to low and pour in the heavy cream. Beat for 1 minute on low, then increase to medium speed and beat until stiff peaks form- about 3-5 minutes.
- Place in the fridge until the ready to serve.
- Slice the french toast casserole into 9-12 slices (depending on how large you would like the pieces). I cut mine into 9 pieces.
- Serve with a dollop of the cream cheese whipped cream and top with Valentine sprinkles, if desired.
- Store any leftover whipped cream or french toast casserole tightly wrapped in the fridge for up to 3 days.
- Enjoy!
