These thick, chocolaty and rich brownies are packed with tart dried cherries & have a secret healthy ingredient that you won't believe...
So here is the thing, you all... I am keeping a BIG secret from my husband.
Like HUGE.
If he finds out the secret ingredient in these Fudgy Secret Ingredient Cherry Brownies, he may not talk to me for a couple of hours.
Why?
Because he pretty much hates avocados. Like a lot.
And after I whipped up this batch of thick, fudgy & moist brownies, I let him lick the batter bowl clean.
Which normally he would LOVE me for, but you see there was an entire mashed avocado in that brownie batter. ;)
I sort of held my breath as he started to scrape the bowl clean with a wooden spoon sure that he would know.
But he didn't. He had no clue.
And I still haven't told him to this day.

I have kind of been fascinated with the idea of creating something deep and chocolaty using avocado in place of the vegetable oils and butter for well over a year now, but this was my first time attempting it.
And the results were amazing!
These brownies only look & taste sinfully decadent...
Fudgy Secret Ingredient Cherry Brownies

Cook Time: 35 minutes
Ingredients (12 brownies)
- 1 avocado (ripe to very ripe), mashed
- 2 tbsp coconut oil
- 1 egg
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup coca-cola
- 1 tsp vanilla
- 3/4 cup baking cocoa
- 1/2 cup flour
- 2/3 cup of dried cherries
- About 2 oz of good quality dark chocolate, chopped (I used Trader Joe's 73% Organic Dark Chocolate Bar.)
Instructions
Preheat the oven to 350 degrees. Spray the inside of an 8x8 baking pan with coconut oil or canola spray. Set aside.
Mash up the avocado in a large bowl. Add in the coconut oil, egg, sugars, coca-cola and vanilla. Beat on low with an electric hand mixer for 2-3 minutes, until smooth. Set aside.
In a smaller mixing bowl, whisk together the baking cocoa and flour. Add this mixture to the wet ingredients and beat on low speed for 1 minute until combined.
Fold in the dried cherries and chopped dark chocolate.
Pour into the prepared baking pan and bake for about 35 minutes.
Let cool completely before cutting.
Store any leftovers in the fridge for up to 5 days.
