Oh yes... you read that right. This food blogger made her first skinny recipe of the New Year! ;)
Don't worry. I am not making the move to becoming a health food blogger. I will still be sharing sweet treats and ooey, gooey cheesy things.
But I am trying to make some smarter choices as far as what I put in my body from here on out.
I love, love, love sweets. If you have been following me for anymore than 2 weeks, you probably already have an inkling about my mean sweet tooth.
But over the past few weeks it has dawned on me that my food choices are not just affecting myself and my body and health.
My almost two year old daughter looks to me as to what is good to eat and what is not.
You know what my toddler started asking from me for snacks?
Chips.
Chocolate.
Ice Cream.
Yep. Light bulb moment.
She was just asking for what she saw mommy eating. Not cool.
So after New Year's Day, I made a vow.
A vow to make healthier food choices from myself, and thus my daughter.
Guess what she is asking for now at snack time?
Matoes. (aka, tomatoes)
Dapples. (aka, apples)
Boo-berries. (not the blue cereal, but blueberries ;) )
And the change literally happened that fast, you all.
One day she was asking for junk; the next day it was fruits.
And seeing this change has only encouraged me to continue to make healthier choices every day since.
But then last week a mad craving for homemade cannolis hit me. Hard.
I almost broke down and headed for the local coffee shop for one, but then it hit me- I am food blogger! Let's satisfy that craving in a healthier way! :)
And thus, my Skinny Chocolate Chip Cannoli Dip was created...
This dip is AH-MAZING, you all! It more than satisfied my craving for a sinful chocolate chip cannoli.
You could even use this dip as a lightened up filling for homemade cannolis. Or use any leftover dip as a topping for waffles or pancakes, or as a filling for crepes.
And everyone in my family loved this!
Skinny Chocolate Chip Cannoli Dip
You won't miss the fat & calories in this easy dessert dip!

ingredients:
- 1 cup of low fat ricotta cheese, drained of liquid
- 2/3 cup of low fat or nonfat vanilla Greek yogurt
- 1/2 container (4 oz) of thawed lite or fat free whipped topping
- 2 tbsp powdered sugar
- 1/2 cup mini chocolate chips
- Graham crackers, apple slices, strawberries, etc for dipping

How to make Skinny Chocolate Chip Cannoli Dip
- This is seriously the easiest recipe ever- in a medium mixing bowl, cream together the ricotta cheese, vanilla yogurt, and powdered sugar with a wooden spoon. Fold in the thawed whipped topping and then the mini chocolate chips.
- Transfer to a small serving bowl. Garnish with a few mini chocolate chips on top, if desired.
- Serve with graham crackers, apple slices, strawberries, etc.
- Store any leftover dip in an airtight container in the fridge for up to 3 days.
- Enjoy!
