Shortbread Cookie Butter Truffles

A couple of weeks ago, I picked up a bag of those red vanilla flavored candy melts at the craft store.  I really had no clue what I was going to do with them, but I knew I had to buy them.  I have been seeing all kinds of fun sweet treats & candies made from them on other blogs.  I was intrigued.  Usually I just melt down chocolate chips or white chocolate chips when want to dip or cover something.  
(These melts are WAY better than that method! :) )

I was contacted last month by Walkers Shortbread to part of their holiday blogger program.  I am sucker for shortbread... and Walkers Shortbread?  I am pretty sure there is no question that they make the best out there, right?  
It has taken all kinds of self control to not woof down every single box of cookies that they sent me- Shortbread Petticoat Tails, Assorted Shortbreads, Festive Shapes, Mini Stars, Mini Mincemeat Tarts, & Stem Ginger Biscuits....  Yep, Walkers was VERY good to this food blogger. ;)

So back to those candy melts... I decided that I needed to make some holiday festive truffles with them.  I came across this recipe from Shugary Sweets for Peanut Butter Cookie Dough Truffles.  I thought why not a cookie butter and shortbread truffle??  Cookie butter and shortbread are just begging to be combined into something yummy- am I right?  
I changed up some of the ingredients and measurements (I did not want over 30 of these amazing truffles sitting in my fridge, lol!).  

These truffles are rich, buttery with a little crunch from the crushed Walkers shortbread cookies...  Holiday truffle perfection!
Shortbread Cookie Butter Truffles

Prep Time: 2 hours, 20 minutes
Cook Time: None
Ingredients (15-18 truffles)
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup creamy cookie butter or Biscoff
  • 1/2 cup flour
  • 1/8 tsp salt
  • 3/4 cup crushed Walkers Shortbread cookies (about 6-7 cookies)
  • 8-9 oz of red (vanilla flavored) candy melts
  • holiday sprinkles
Instructions
In a large mixing bowl, cream together the butter and cookie butter until creamy. Add in the flour and salt. Mix well. Fold in the crushed shortbread cookies.

Roll the truffle dough into 1 inch balls and place on a baking sheet lined with parchment paper. Freeze for at least 2 hours.

Melt the candy coating according to the package directions. (You could also use green or white vanilla candy melts.)

Drop each truffle ball into the melted candy and flip around with a spoon until well coated. Place on a sheet of waxed paper and immediately top with the your choice of holiday sprinkles. (You will want to do this as soon as you place each truffle on the waxed paper as the candy coating will set quickly.)
Allow to set up for at least 10 minutes.

Store in an airtight container in the fridge for up to two weeks (but trust me- they won't last that long!).
