Buffalo Chicken Caesar Wonton Bites

We are huge Buffalo chicken fans and big Mountaineers fans (go WVU!) in this house. Football season always means tailgating and football food to me. 
And yes, I admit it.

I often look forward more to the tasty party foods than the actual games themselves. ;)
Regardless if I am actually wanting to watch the game or maybe just socialize (and stuff my face) more, easy party foods that are tasty and quick to prepare are essential to me.

When Tyson asked me to create a fun and delicious tailgating recipe using their Buffalo Chicken Strips, I knew I wanted to do an easy finger food- no utensils needed!  I mean, who wants to be standing around at a tailgate or a football party holding a plate, a beer, and trying to stab something with a fork at the same time?  Am I right?

I combined one of my favorite salad flavors with the tasty Tyson Buffalo Chicken Strips to make my Buffalo Chicken Caesar Wonton Bites...

Buffalo Chicken Caesar Wonton Bites

Prep Time: 10 minutes
Cook Time: 28 minutes total
Ingredients (40 wonton bites)
  • 3-4 Tyson Buffalo Chicken Strips
  • 2 celery stalks, chopped into small pieces
  • 1/2 cup of your favorite bottled Caesar dressing
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup shredded mozzarella
  • 40 wonton wrappers
  • 2 tbsp canola oil
Instructions
Preheat your oven to 400 degrees. Place 3-4 Tyson Buffalo Chicken Strips on a baking sheet. Bake per package directions for about 18 minutes.
Once baked, set aside and allow to cool.

While the buffalo chicken strips are cooling, chop your celery. I cut each stalk lengthwise down the middle and then chopped into small pieces.
Place the celery in a medium mixing bowl.

Once the chicken strips are cool enough to handle, chop them into small pieces and add to the celery in the mixing bowl. Pour in the Caesar dressing and the shredded Parmesan and mozzarella. Mix well.

To make each wonton
Fill a small bowl with a little water. Place about 1 1/2 tsp of the buffalo chicken mixture in the center of a wonton wrapper. Dip your finger into the bowl of water and wet all four edges of the wrapper. Gather up the corners and sides of the wonton wrapper up and around the filling to form a little package and then pinch at the top. If the edges start to pull away, wet the top of the wrapped wonton with a little water and pinch and press the edges. Place on a greased baking sheet. Repeat this for all 40 of the wontons.
Brush the top of each wonton with a little canola oil.

Bake at 400 degrees for about 10 minutes, or until the wontons turn a golden brown. Let cool for at least 10 minutes before serving.
I served mine with celery and blue cheese.

**If you want to bring these to a tailgate party, you could bake them before leaving the house and then re-heat them on a grill in a foil packet.
You could also prep and refrigerate the buffalo chicken filling the night before, and then just assemble the wontons in the morning.
