There. I said it. 






Need proof?  Remember when I dedicated an entire week on the blog just to cookie butter? ;) Yeah... there was that.






And I am not going to lie.  I have been pining away for fall because I KNOW that Biscoff (also known as cookie butter under some labels) is the perfect complimentary flavor to just about all of the popular fall flavors.






Pumpkin?  Heck yeah! (And yes, there will be recipes coming to the blog soon marrying our favorite orange gourd with our favorite non-peanut butter spread.)
Apples?  Of course!

I have been dreaming of a delicious, homemade apple pie with a little cookie butter tucked inside, and I made that dream a reality, friends.

Apple Biscoff Crumb Pie

Tender apples, cinnamon, & gooey cookie butter come together perfectly in a flaky crust with a crunchy oat topping in this Apple Biscoff Crumb Pie.

prep time: 25 min cook time: 45 min total time: 1 hour, 10 min

ingredients:

  • Your favorite homemade or store bought single pie crust (my go-to is the recipe using Butter Crisco)
  • 5-6 medium apples- peeled, cored, & sliced
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 2 tbsp flour
  • 1 tbsp fresh lemon juice
  • 1/2 cup Biscoff spread (or cookie butter), melted (30-40 seconds in the microwave should do it)
For the crumb topping
  • 2/3 cup rolled oats
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 3 tbsp of cold butter, cubed

instructions:

How to bake Apple Biscoff Crumb Pie

  1. Preheat your oven to 375 degrees.
  2. Place the pie crust dough into an 8 or 9 inch pie plate and press the dough into the bottom of the pan and up the sides, trimming the excess. Prick holes in the bottom of the crust using a fork. This will prevent your crust from bubbling up during baking. Set aside.
  3. In a medium bowl, mix together the apple slices, brown sugar, spices, flour, and lemon juice. Place the apple mixture into the prepared pie dough in your pie plate. Now pour the melted Biscoff all over top of the apples. Set aside.
  4. In a small bowl, whisk together the oats, flour, brown sugar, and salt. Cut in the butter using 2 forks or a pastry blender until a soft, crumby dough forms. Sprinkle this evenly over top of the apples and melted Biscoff in the pie.
  5. Bake for 40-45 minutes until the crust and crumb topping turns golden brown and the apples are bubbly. Allow to cool to warm before cutting.
  6. Enjoy!
