So, I have decided to declare this ENTIRE week Birthday Week on my blog!  
Why, you may ask? 
Because my birthday is this coming Sunday! ;)

Yeah... this post is a little late getting up today.  But hey, it's okay.  Know why?
Because it is my Birthday Week!  
And I can post a little later if I want to, right?

This entire week I have some fabulous guest recipe posts lined up from some of my favorite food bloggers. And they have all created recipes around some of my favorite foods and drinks! (Think tiramisu, peppermint mochas, etc...) Plus, I have a fun giveaway coming to the blog to celebrate starting on Sunday, so stayed tuned!

But I thought I would start the week with a little spin on one of my absolute favorite adult beverages, the classic mojito... Mojitos are my choice of drink for the summer. Having a fresh mint plant potted on the deck just steps from my kitchen door makes it just a little too easy to grab a handful of leaves and get down to some serious mojito muddling.  

For the most part, I am a purist. I love a nice classic mojito- fresh mint, limes, rum, simple syrup, & a splash of club soda. But every once in a while, I like to change it up a bit like when I experimented with using spiced rum instead of white and came up with my Spiced Pineapple Mojitos.

Fresh blueberry season is upon us, and it seems that classic mojitos just beg for a little fresh fruit action every now and again.  ;)  Am I right?  So, I added fresh blueberries to this classic mojito and because I love the flavor combo of blueberry with ginger, I swapped out the club soda for a little ginger ale.  Thus, my Blueberry Ginger Mojitos were born...

You could easily double, triple, or quadruple this recipe if you are hosting friends for a Labor Day weekend barbecue, or let's say a birthday party for your favorite food blogger. ;)  

If you are going to make mojitos for more than four, I would suggest just making a pitcher so you will not spend all your time muddling mojitos and more time enjoying your company. Just muddle everything in a large bowl, dump into a pitcher, pour in the rum, simple syrup, and ginger ale and stir.  Let everyone fill their own glasses with ice and make the mojitos self-serve.

Blueberry Ginger Mojitos

Prep Time: 5-10 minutes
Cook Time: none
Ingredients (2 servings)
  • 1 lime, quartered
  • 1/3 cup fresh blueberries
  • handful of mint leaves
  • 1/2 cup light rum
  • splash or two of ginger ale
  • Simple syrup to taste
For the simple syrup
  • 1 cup water
  • 1 cup sugar
Instructions
To make the simple syrup
Combine the water and sugar in a medium saucepan. Bring to a boil and stir until all the sugar has dissolved. Remove from heat and allow to cool completely.
Once cooled, store in a mason jar in the fridge for up to one month.

For the mojitos
Squeeze the juice from the lime quarters into a cocktail shaker, then throw in the quarters. Add the mint leaves and the blueberries. Using a pestle or the back of a wooden spoon, muddle the limes, mint, and blueberries together.

Pour in the rum and add a bit of the simple syrup. Place the cap on the cocktail shaker and give it a quick shake or two.

Fill two glasses or pint jars with ice. Pour the strained mixture evenly into both glasses. Now go ahead and dump 2 of the lime quarters and some of the mint leaves into each glass. Top with a splash or two of ginger ale.

Give it a quick stir and taste. If it is not sweet enough for you, add in a little more simple syrup and stir.
