I attempted a patriotic pie to take to a family barbecue last week. Yep, that is the pie in question above. Looks pretty, right?
I had been formulating the plan for this pie in my head for a few days before the actual pie making day. I wanted a sugar cookie pie crust filled with a blueberry cheesecake layer with a creamy raspberry layer neatly on top of it and then some Cool Whip spread prettily across the top of the whole thing. It seemed like all of these elements were coming together perfectly in my pie.
I placed the pie in my fridge to allow it to set up overnight.
It would have to be pretty well set up after like 9 hours, right??
Well, not exactly...
Yep. Big fat pie fail. :P
I decided to go ahead and cut into the pie prior to the barbecue so that I wouldn't have to subject my family members to the wait while I snapped photos for the recipe post I was planning on doing for my pie.
It turned out to be a gloppy mess... What I like to deem "spoon pie". ;)
There were no nice even layers of blueberry cheesecake and raspberry filling. It just all mixed together into a red, white, and purple tie dyed looking mess.
But... it was still delicious and there was not a single slice of pie leftover after it was all said and done.
Lesson learned: Just because it isn't pretty doesn't mean that it won't still be tasty. ;)
