This Ranch Buffalo Chicken Salad isn't your grandmother's chicken salad! Spicy Buffalo sauce & cooling Ranch give this classic recipe a tasty, new twist...
Much to my surprise and unknowingly to one another, the two bloggers who posted guest recipes on my blog this week both shared fun twists on some of our favorite traditional sandwich salads. (Make sure you check out Melissa's Ham & Egg Salad recipe, and Raquel's Chicken & Grape Salad recipe!)
I thought I might as well jump on this bandwagon and share my recipe for an easy and delicious Ranch Buffalo Chicken Salad. ;)
Buffalo Chicken anything & everything is a staple in our house. So, I thought why not a Buffalo Chicken Salad? This is perfect for a quick afternoon lunch or to pack for a picnic at the park.
What you will need:
2 cups of cooked chicken, chopped (I used some of the Slow Cooker Roast Chicken I made the day before)
1 stalk of celery, chopped
1/4 cup Ranch dressing
1/2 cup light mayonnaise
1/4 cup prepared Buffalo sauce
1/4 tsp garlic powder
1/4 tsp black pepper
1/2 tsp salt
1/4 cup blue cheese crumbles (optional)
This chicken salad is a cinch to throw together. Dump everything from the chicken through the salt in a large bowl and mix well. Then fold in the blue cheese crumbles. Store in an airtight container in the refrigerator until you are ready to serve.
That's it! Easy, peasy and definitely not your grandmother's chicken salad, right? ;)
Serve on fresh sandwich buns, your favorite bread, or crackers.
Do you have a fun twist on a traditional sandwich salad that you like to make? :)
