Cookie Butter Week is winding down and will soon come to a close on the blog. ( I know... *tear*.) But I still have a couple more cookie butter recipes to share with you all, starting with my Pumpkin Pie Cookie Butter Smoothie.
I was originally inspired to try my hand at a cookie butter smoothie after seeing Kelley's from The Grant Life's Cookie Butter Granola Smoothie. (Yum! Go check it out if you haven't already after seeing it in my Nine Reasons to Eat Cookie Butter for Breakfast Recipe Round-Up Post.)
I know, I know. Pumpkin is supposed to be a fall thing. But I am throwing convention to the wind, and I bought a can of pumpkin.... In June.
I adore all things pumpkin (just wait until September and October rolls around if you don't believe me ;) ).
But why can't we have it in the summer too?
I say, let's have pumpkin in June, and July, and August!
My Pumpkin Pie Cookie Butter Smoothie is perfect for a quick, healthy breakfast or a sweet afternoon treat after a good workout or a nice day at the pool. :)
Yield: Serves 1
Pumpkin Pie Cookie Butter Smoothie
The flavors of pumpkin pie come together perfectly with cookie butter in this creamy & easy to make Pumpkin Pie Cookie Butter Smoothie.
prep time: 5 min cook time: 0 total time: 5 min
ingredients:
- 1/2 of a frozen banana, chopped
- 1/3 cup canned pumpkin
- 2 tbsp cookie butter
- Dash of cinnamon & nutmeg (could also use a couple dashes of pumpkin pie spice if you have it)
- 1/3 cup nonfat plain Greek yogurt
- 1/2 cup milk (your preference)
- Honey to taste
- Whipped topping/cinnamon for topping (optional)
instructions:
How to cook Pumpkin Pie Cookie Butter Smoothie
- Place everything but the whipped topping in the blender. Blend until nice and smooth.
- Pour into a glass and top with a little whipped topping and a sprinkle of cinnamon, if you wish.
- Enjoy!
