Skillet Grilled Pork Tenderloin Sammies {A Guest Recipe from Cookin' For the Seven Dwarfs & a Giveaway!}

Hello everyone! I'm Lorraine from Cookin' for the Seven Dwarfs! I am so excited to be guest posting this week! Thank you so much for giving me the opportunity to do this, Carrie!

I am the only sister to 6 brothers (not including my sisters-in-law), and one of my favorite things to do is cook for all of them! You'll notice over on my blog, I call each brother, sister-in-law, and parent by Dwarf names or Princess names.
I grew up watching my Fairy Godmother (my mom) cook for us when I was little and saw how much love and time she put into each meal and I was always fascinated by it. We didn't grow up with a lot of money, but she would go all out on each meal and everything she made was amazing. When I got old enough to help her, she taught me everything she knew and passed on her passion for cooking to me. Now we cook as a team when we have big family get-togethers or holidays!

A lot of what I share over on my blog are old family recipes from Doc's (my dad) side of the family or recipes that have been approved by each Dwarf or by the Princesses.

A recipe I'm sharing today is something my Fairy Godmother made up, this recipe is SO good, and a great way to sneak in kale! I wanted another sandwich after I finished my first one! This is definitely a man pleasing sandwich! :)

What you'll need:
Cast Iron Skillet

Skillet Grilled Pork Tenderloin Sammie
Makes about 4 sandwiches

BBQ seasoned Pork Tenderloin, sliced thin
8 slices of Challah bread
1 onion sliced thin and grilled with 1 Tbsp bacon grease
1 tsp montreal steak seasoning
4 flat leafed Kale leaves, sliced thin
4 slices of pepper jack cheese
Garlic powder

Grill onion in bacon grease until soft. Add kale and turn heat off and let steam with onions. Slice 2 thick slices Challah bread. Butter and sprinkle garlic powder on one side of bread and grill in cast iron. Layer pork and cheese on one side of toast. Spoon a layer of onion mixture and add another grilled toast. Enjoy!
