I am always on the search for a good recipes to use my over ripe bananas in. I always seem to be left with at least 2 bananas that get soft and brown in every bunch that I buy. A couple of months ago I wrote a Pinspiration in the Kitchen post about some amazing Banana Bars with Cream Cheese Frosting (just in case you are looking for some more pinspiration for those over ripe bananas ;) ).
This Banana Snacking Cake was delicious and moist. It is more fluffy, less dense than a banana bread. I served the cake with a healthy dollop of whipped cream and fresh raspberries I had leftover from my Framboise Raspberry Cup Cake baking adventure.
