When it comes to breakfast for myself and my family, I like making sure that we start our day with something healthy & filling that can take us right on through to lunch. And since we all have different start times to our days (my teenage son being up and at 'em well before the rest of us), I need breakfast recipes that will be easy to grab and ready to go no matter if we are eating breakfast at 6am or 9am. That is why I just love baked oatmeal! :) I can bake up a batch on a Sunday night, cut it into generous squares, and then slip each one into it's own ziploc baggie. Those hearty oatmeal squares become the perfect grab and go breakfast throughout the rest of the week.
I have made different versions of baked oatmeal before (you all may remember my Almond Joy Banana Bread Baked Oatmeal & my Double Berry Banana Bread Baked Oatmeal), but this moist & satisfying Peanut Butter Chai Banana Baked Oatmeal just may be our favorite one yet. Not only is this baked oatmeal packed with lots of the good stuff (think bananas, whole oats, chia seeds), but you just can't beat the flavor combo of creamy peanut butter with chai spices. Peanut Butter Chai Banana Baked Oatmeal

Ingredients (9 servings)
- 3 ripe bananas, peeled and mashed
- 1/3 cup brown sugar
- 2 eggs
- 1/2 cup creamy peanut butter
- 1/2 tsp salt
- 1 tsp Chai Spice Mix
- 1/2 tsp vanilla extract
- 1 tsp baking powder
- 1 1/2 cups almond milk (could use regular or soy milk instead)
- 2 tbsp chia seeds
- 2 1/2 cups old fashioned rolled oats
Instructions
Preheat your oven to 350 degrees. Spray a 9x9 baking pan with cooking spray. Set aside.
In a large mixing bowl, combine the bananas, brown sugar, eggs, peanut butter, salt, Chai Spice Mix, vanilla extract, & baking powder. Whisk until smooth. Pour in the almond milk, and whisk well. Stir in the chia seeds until well incorporated.
Stir in the oats, and then pour into the prepared baking pan.
Bake for 45 minutes, or until the edges are golden brown and the center is no longer sticky.
Allow to cool and then cut into 9 squares. You can go ahead and portion the squares into baggies or resealable containers for busy school mornings and store them in the fridge or freezer, if desired.
These baked oatmeal squares can be served cold or warmed in the microwave.
Store any leftovers covered in the refrigerator for up to 4 days.

I just love how versatile baked oatmeal is. You can eat it warm or cold. Grab a square of it to eat on the go, or pour milk over it in a bowl. You can even freeze these squares and easily thaw and heat them by popping them in the microwave for 30-45 seconds. :)
