I have been a long time fan of the avocado. I scoop them straight out of the skin with a little Kosher salt. I toss sliced avocado in salads. I dice them and add them to omelets and tacos. And of course, I make the ever popular guacamole with them. But what I most like to do with avocados is to make creamy, decadent desserts with them and not tell my husband. ;) Shhhhhh...
The creamy texture and mild flavor of avocado just lends itself to desserts, especially ones with stronger flavors like the dark chocolate and ginger in this easy to make mousse. Those of you that have been frequenting the blog recently may have already noticed this, but I have been on a quest lately to create healthier sweet treats that only taste like a decadent splurge. My goal is to create a few healthier alternatives to have handy before the full-on holiday sweets season arrives. Not that I am giving up my frosted sugar cookies and gingerbread, folks. ;) But I am trying to strike a better balance this coming holiday season. And using healthy, nutrient dense Hass avocados in more of my cooking and baking is a tasty way to accomplish that goal...
Yes, folks. Avocados do contain fat, but it is those good-for-you monounsaturated fats which have been shown to be essential to a healthy diet. And because they contain these healthy fats they keep you feeling fuller long (ahem... less binge snacking later). They also happen to be cholesterol and sodium free. And just one-fifth of a medium avocado (about 1 oz.) has just 50 calories and contributes nearly 20 vitamins, minerals and phytonutrients to your daily intake! Can we all say super fruit? :)
Now, I happen to have a husband who is against anything green. Being the good wife that I am, I have to get creative and find ways to sneak some of that good-for-him green stuff (like avocados) into his everyday diet. You know, without him actually knowing it. ;)

Dark Chocolate & Ginger Avocado Mousse

Cook Time: 2 minutes
Ingredients (2 servings)
- 1 ripe Hass avocado
- 1 tbsp almond milk
- 1.75 oz good quality dark chocolate, chopped
- 1/4 cup sugar
- 1 tsp cocoa
- 3/4 tsp ground ginger
- 1/4 tsp vanilla
Instructions
In a small mixing bowl, combine the avocado and almond milk. Beat on medium speed until nice and creamy.
Melt the dark chocolate in your microwave in 30 second increments, stirring after each one until smooth and completely melted. Now stir the sugar into the melted dark chocolate until it is well incorporated. Add this dark chocolate/sugar mixture to the avocado mixture.
Now add in the ginger and vanilla. Beat over medium speed until the mousse is creamy and smooth.
Cover and refrigerate for at least 30 minutes.
To serve, you can either scoop into bowls or prettily pipe it into dishes using a pastry bag and tip as I did. I actually piped the entire amount into one large serving dish for sharing.
Garnish with a gingersnap cookie, a dark chocolate piece, or even dark chocolate curls, if desired.

Yep. The husband was fooled yet again. And I feel good knowing that he is getting some of that healthy stuff in there.
