A visit to any local farmers' market or perhaps even to your own backyard garden will reveal that one thing is certain- zucchini season is definitely here and they are plentiful! :)
While I didn't plant any zucchini myself this year, I can attest that they can be pertained at both the farmers' markets and grocery stores for pretty darn cheap right now. And cheap is always good. ;)
But let's be honest- you can only make SO many loaves of zucchini bread and batches of zoodles (have you all seen these??) before you are zucchini'ed out.
So let's make something chocolaty, fudgy, and deceptively decadent with them instead, shall we?
These super simple and easy zucchini brownies were inspired by my friend Jellibean Journals' recipe for Life-Changing Skinny Avocado Brownies. Both recipes have just 3 simple ingredients, but have only one ingredient in common- the boxed brownie mix!
But both variations are delicious, fudgy, and are a fun & easy way to sneak more veggies into your family's diet... ;)

3 Ingredient Zucchini Brownies
These incredibly moist 3 Ingredient Zucchini Brownies are so easy to make, plus they have bonus hidden veggies.
prep time: 5 min cook time: 35 min total time: 40 min
ingredients:
- 1 box of your favorite brownie mix (I used an 18.9 oz box of Betty Crocker brownie mix)
- 1 cup pureed zucchini chunks
- 1/3 cup coconut milk
instructions:
How to bake 3 Ingredient Zucchini Brownies
- Preheat your oven according to the brownie mix box's instructions.
- In a large mixing bowl, combine the brownie mix, pureed zucchini, and coconut milk. Mix well.
- Pour into a greased baking pan (I baked mine in a 9x9 pan.) Bake according to the box's specifications.
- Allow to cool completely and then cut into 9-12 squares, depending on how large of brownies you would like.
- Store any leftovers covered in the fridge for up to 5 days.
- Enjoy!
